I’m just about to plant three of these terrestrial orchid corms in a plastic plant pot which I then plan to sink into a bigger pot outside. Would I be better keeping the orchid pot inside until the frosts are past, then sinking it into the bigger pot?

What’s for sure is that young plants are more vulnerable, so the keeping them out of harsher colds will help the first year. But as luis_pr says, it depends on your winters.
