I have a massive loquat tree that does very well but the birds have the greatest feast and a lot of the fruit is way to high to collect.
I am looking for advice on severe pruning and general advice

You can cut those tall branches you don’t want to keep that are just above the new grown ones. Then every fall thin out the canopy, this doesn’t only keep desired height and size of the tree but also lets sun and air come in.

Note that if you are in a zone where winter is harsh, pruning should be done at the end of winter but if you’re in a mild climate, you can do it in autumn. What we’re avoiding here is exposing the cut wounds to frost. This video on pruning tall branches is helpul: https://www.youtube.com/watch?v=s5QVRNWZEVc

Please leave a few fruits to the birds..  😀
